on the menu this week.


after last week i wanted to "create" this week and this is what i have come up with. after a surprising sale on t-bones today at the local grocery i had to edit a bit as there seems to be an abundance of meat and some already defrosted. but again thank my lucky stars we have food for our table. happy eating! what are your plans for the week?

sunday: t-bones, roasted potatoes, sauteed onions and mushrooms, salad.

monday: asian apple marinated pork roast, yummy rice (recipe below), green peas.

tuesday : chicken fajitas with avocado salsa.

wednesday : stir-fry using leftover pork.

thursday:  easy pasta pomodoro - recipe found here. found san marziano tomatoes at costco -  6 for $6.99 - jealous?

friday: warm french lentils with mild italian sausages.

saturday: roasted shrimp with feta cheese.

sunday: burgers with coleslaw and sweet potato fries.

yummy rice
1 tablespoon canola oil

brown or white rice
chicken or vegetable stock - your preference.
diced white onions
seasonings - i like to use mrs. dash for this.

dice either half or a whole white onion - if using only one cup of rice dice half the onion, if doing more than that dice the whole thing.

add the canola oil to a medium saucepan over medium heat. add onion and sautee till slightly translucent. add rice to pot and stir with onion to coat with oil. add seasonings and sautee for 2 to 3 minutes so the rice gets warm and toasted. substitute stock for water and add in quantities according to package directions. bring to a boil, reduce to a simmer and cover. cook according the package instructions - i always find it needs a couple minutes more but check at the appropriate time because everyone's stove is different! fluffy with a fork and taste.

a great makeover for an old favorite. also helps to get someone on to the brown rice bandwagon who currently had been sitting on the fence - makes it all nice and tasty!
